Pad Thai (vegan friendly)

So I was contemplating whether or not I should go out to eat. There are quite a few thai restaurants in the area I live. However, I decided to instead to purchase a few items and make my way home to make my own Pad Thai…which I will share. Enjoy!
  

Gather Ingredients:

1 cup water, plus more for soaking the noodles

2 tablespoons coconut oil

1  package rice noodles 

A few garlic cloves 

One head of broccoli

Tofu

2 fried eggs (exclude if vegan)

4 tablespoons peanut butter (I used chunky)

Gluten free tamari sauce 

Juice of 1 large lime 

3 Tbsp. sugar

Hot sauce of choice 

Scalions,for garnish

Chopped peanuts, for garnish (optional)
  
 
My method: 

I boiled a large pot of water , turned the fire off and placed the rice noodles in the water and allowed it to soak for about 15 minutes.

In a large frying pan, heat the coconut oil ,  garlic cloves and tofu . Add tamari sauce and sauté. Add the broccoli chopped into small pieces. Cook for about 10 minutes. Fry the eggs in the same pan by pushing the ingredients to one side. 

Meanwhile, mix the peanut butter, lime juice, sugar, hot sauce, some tamari sauce with 1 cup of water. After this is done, combine all the ingredients together in one pan. Add to your noodles and cook a few mintues more. 

Top with scallions and crushed nuts. So easy. Beats going to the restaurant not only to avoid the risk of cross contamination but it tons cheaper. Enjoy!
  
 

Rum Cream Pie

Yum yum yum…..here is a quick recipe you can make for dessert. This is not Kidren (kids, children) friendly however. 
  
 
 

For the crust:

Gluten free oatmeal 

Pitted dates

Melted coconut oil

Blend these together to form a dough. You can add a bit of water to assist with the blending. Using a muffin pan or cupcake liner , take about 2 tablespoons of the dough and form a dough to fit the bottom of each container. Bake for about 10-15 mintues.

  

Meanwhile , you can prepare your filling. 

For the filling:

One pack of cream cheese

About one teaspoon Vanilla extract

A pinch Sea salt

1 egg

 About half a teaspoon of cinnamon powder

Rum (Measurement up to you)  *This is why this is not a Kidren friendly recipe*

Blend for about 30 seconds and you should have a slightly whipped texture. You can now taste the mixture. Taste not eat :). Adjust to taste. This makes the cheesecake light, fluffy and amazing. 
Spoon some of the batter on top of each of your baked mini cheesecake crust. Bake the cake for a few minutes, about 15 minutes and remove from the oven. Allow to chill at room temperature or about an hour then place in refrigerator and allow to set about 1-2 hours. 
  

This will not be hard when set. A bit messy yes…but the taste makes up for that. Hope you try this out. Let me know if you do. Enjoy!! 

Additional/optional add-ins: fresh fruit: berries, mango, coconut flakes, chocolate sauce, caramel sauce, dried fruit etc. 

Parmesan Plantain Party

Well at least in your mouth it is. These plantain chips are simply put…amazing. These are great for a snack, side dish or hors d’oeuvres.  And the best part- all you need are some green plantains. 
  

Peel the green plantains. Cut them into thin circles as I did below. Please be careful if doing this by hand.
  

Deep fry or bake these and you are all done. When they are crispy you can now play dress up. The toppings are endless. You can eat these with just about any dressing or dipping sauce imaginable. I like to have them with a simple dressing made of: melted butter, garlic, sea salt and lemon. Can you say perfection.

  

I actually dusted these in Parmesan cheese and sea salt.  You can try, pepper flakes, garlic powder, lime, lemon. Be creative. If you do try or have tried these out, let me know. Hope you enjoy!!
  

Cool Cauli

Cauliflower pizza that is. I know right..how cool. The internet is flooded with recipes of how to do this. However, I’ll share with you how I completed my simple , amazing  and quick lunch pizza. Cauliflower style.
 

If only you could smell it….
  

I washed a fresh large head of cauliflower. Cut off the florets into small enough pieces and chopped in a blender. I recommend a food processor for this, you can also grate the cauliflower. After this was done it gave me a rice consistency. I boiled 2 cups of Cauli “rice” in about 3 tablespoons of water for about 5 minutes. Ring all the water out of the Cauli rice mixture using a clean hand towel or a cheese cloth. 

In a bowl, I combined 2 beaten eggs, seasoning, some grated Parmesan cheese and my Cauli rice. Forming a dough, I split the batter into two and shaped by hand into a circular form. I baked this for about 30 minutes. 
  

I removed the crust from the oven and placed my toppings. 
 

As always, you can personalize any recipe you see here with whatever you have on hand. I wish I had some olives. But I have a reason to make this again soon. Next time, I will be adding jalapeños. Have you tried Cauli pizza?  Please share :). Hope you enjoyed this post. 
 

  

Quick Quinoa

Hi, hope everyone is doing well. If you will be snowed in like me this weekend hope you have everything you need in house.  Just wanted to share a quick quinoa recipe. (Quinoa pudding coming soon). Good snow day recipe ❄️☃☃. You can throw in whatever you have on hand. You can use leftovers if you would like. This can be used inside rice wrap papers for rice wraps and/or then fried for spring rolls.  Hope you enjoy. 
  

I just cooked up some quinoa as the package directions indicate. I sautéed garlic, onions and bok choy in a sauce pan with coconut oil. I added the rest of my veggies and sautéed for about 10-15 minutes. I added my seasoning. This is so fragrant and delicious.
  

Next, I placed the cooked quinoa into my vegetable mix and sautéed a bit longer. Added some sesame oil and grate some fresh ginger over the mix. Cook for about 1-2 minutes more. Turn off the heat. Enjoy!!

*If you are non-vegan you can add cheese-jalapeño, cheddar, pepper jack, goat, Brie*

Additional add-ins/Optional: Dried cranberries, cheese, olives, fresh peppers,

Poppin’ Power Bites

I sincerely hope that everyone is doing well. We have all heard of superfoods and how beneficial they are to us. Use them in smoothies, top your yogurt, use in baking, on salads the list goes on. Today I have combined a few of my favorite superfoods along with some other ingredients to give me a “pop of power” in  bites that I can have whenever I need a lot of energy. Which is always. 
   

 
I combined:

Gluten free oatmeal (blended for about 2 seconds)

Chia seeds

Maca powder

Hemp seeds

Coconut oil (melted)

Peanut butter (I used crunchy, u can use an alternate nut butter)

Vanilla extract

Sea Salt (a pinch)

Dried Cranberries 

Honey ( or Vegan alternative)

Cocoa Powder (unsweetened)
   

   

After blending the oatmeal slightly. Mix ingredients together. Once a dough starts to form you are on the right track. You can begin to mold your bites into the shape and size you want. Place in refrigerator to set and enjoy whenever. Done in a flash.

No Meat Balls (sweet plantains)

Long time no eat- spaghetti and meatballs that is. Well problem is, I don’t eat meat as you may already know. However, I didn’t let that stop me. I share my no-meat plantain balls recipe with you. Enjoy!!
  

Ingredients:

Very Ripe Plantains

Gluten free flour 

Small amount of baking powder

Seasoning (spices of choice)

Gluten free spaghetti 

Cheese (for non vegans)

Tomato Sauce (Homemade recipe soon)

Method:
Mash the very ripe plantains with clean hands until you have only a few lumps left. Add in spices and the baking powder. Add the gluten free flour kneading, as you pour in a little flour at a time. Form a dough that is firm yet not stiff. Form small balls with the dough and set aside. 

Cook your spaghetti according to package instructions. 

  

Next, heat your tomato sauce or make if your are making from scratch. Lightly fry the plantain balls on each side for about one minute until the balls are brown in color. Place the lightly fried balls in the sauce pan with the tomato sauce. Set the heat on low and cook the plantain balls in the tomato sauce for about 20 -30 minutes. You may add water to your tomato sauce as needed. You want to cook the plantain balls well. 
  

Your plantain balls will resemble dumplings. 😋. They are hearty and delicious. If you are not vegan you can top with Parmesan or other cheese of choice.  Meat, what meat? #vegetarian. Hope you try this out. If you do let me know how it goes. 

Mon Crêpe

Do you like crepes? Well I do, especially when I make them myself. I have an easy and delicious crepe recipe that you can whip up in minutes. 

  

Ingredients: (approximate, adjust as needed)

3-4 tbl Gluten free flour ( I use Bob Mills brand)

A dash Vanilla Extract

A pinch of Sea Salt 

2 eggs beaten 

3 tbl Almond Milk 

1 tsp Brown sugar 

Melted Butter (I used earth’s balance)
Method:
Melt the butter in a non stick skillet and pour the melted butter into crepe batter. 

Beat the two eggs in a bowl. Add Vanilla extract and mix well. Add a pinch of sea salt and the brown sugar. Pour in the almond milk and wisk well. 
  

Pour about 1/4 cup of the batter into the skillet and rotate the pan so the crepe batter can cover the bottom of the skillet, taking its circular shape. Cook about 90 seconds, flip the crepe and cook an additional minute or so. 
  

Be creative with your crepe. I had these for breakfast and dessert 😋. Of course you can fill them with whatever you’d like. The combinations are endless. How do you fill your crepes?  I hope you enjoy and please share. 

Oh Oh Oatmeal 

Just wanted to share a quick oatmeal cookie recipe. It doesn’t get more simple and quick than this oatmeal delight.

  

Ingredients:

Ripe Banana

Oatmeal (Gluten free)

Cranberry (or other dried fruit of choice )

Method:

Combine ripe banana, oatmeal and dried fruit in a blender or nutribullet as I did. You can add a little water to help the mixture blend if needed. Blend about 5 seconds at a time. For about 10-15 seconds or less. Stir the mixture until you get a smooth but not runny consistency.  Using a tablespoon, scoop out some of the batter and place on baking sheet/pan. 
  

I cooked these for just a few minutes. Keep an eye on them. Once you start to smell them you know they are soon done. Hope you try this out and enjoy.
