Eat ‘Cake’ for Breakfast

Hope everyone is enjoying the long awaited  nice weather, if you are on the East Coast. Although it’s not quite summer the weather is trying, in the meantime while I wait for some heat ☀️☀️ I’ll eat cake!! Don’t judge me….I wanted to make a simple, gluten free pound cake for sometime now. I finally got down to it. And yes, I did eat it early in the morning. Some people eat muffins for breakfast so hey, why not? It’s always 5 o’clock  somewhere. Lol. This cake came out so moist and it is absolutely delicious. I used ingredients I had in my kitchen and in one hour I had a beautiful perfectly delicious cake. (If you would like specific measurements leave me a comment.)

I used:

Bobs Mill Guten free baking mix (already contains Xanthan Gum, baking powder and salt)


Almond Milk

Olive Oil


Vanilla extract

Lemon juice

Orange Juice 

I combined the wet ingredients together, and slowly added in the gf baking mix. You can adjust the taste to desired sweetness. Whisk thoroughly until you have a smooth, thick batter. Lightly grease your baking pan and pour your mixture. I baked my cake for  50 minutes on 375. Yum yum yum 😋

Allow to cool..simply slice and share!  

Additional/Optional add ins/toppings: Nuts, dried fruit, almond essence, whipped cream, strawberries, blueberries, homemade rum sauce, chocolate syrup, ice cream etc. Hope your enjoy. If you try this out, Let me know :).

    1. Hi and thanks for asking. I am sorry to hear that but the good news is there are so many delicious easy recipes 😋😋😋. I’m happy to share the recipe with you. I used:

      2 ¼ cups bobs red mill gluten-free baking mix (this is great because it already contains the baking powder, salt, xanthan gum).

      ¾ cup light olive oil
      1 cup sugar (adjust to taste)
      2 tbsp orange juice
      2-3 tsp vanilla extract (adjust to taste)
      3 large eggs
      ⅔ cup almond milk

      I preheated the oven to 375 and baked the cake for about 55minutes. I used a toaster oven so you can use your judgement if using a larger oven.

      I combined the olive oil, sugar, orange juice and vanilla extract. Mixed well. Crack and add the eggs in. Add the milk (I used almond but you can use milk of choice). Best well. Next combine your flour slowly and mix into a batter. Taste the batter for sweetness and adjust according to liking. The batter may be a bit bitter but you won’t taste it once the cake is finished.

      Pop into the oven and just patiently wait. :). It is so delicious and very easy to make. Please let me know how this turns out 🙂

      Although its perfect as is, these are optional but great add-Ins would be:

      grated ginger
      Grated carrots w/raisins (carrot cake eh)
