Don’t miss the “Zucchini” boat

Hmmmm…What’s for dinner tonight?  Need something quick, delicious and healthy? Catch the boat. Well at least the zucchini boat. This is a typical zucchini boat recipe so no surprise here, however I made this all about veggies. 


I simply halved some zucchinis and scooped out the inside. In a pan, I sautéed the zucchini ‘meat’ and added a few things:

Zucchini 

Red Onions

Corn

Black Beans

Red peppers

Green peppers 

Chick Peas 

Cheese  (omit if vegan)

Seasonings

I cooked all the ingredients together, until soft. Then simply scoop the mixture into each boat and topped with cheese.

Place boats into oven, bake for about 20 minutes at 400 degrees. Enjoy!!! Do you have a zucchini boat recipe? Please share

No “Corny” Soup

In fact this soup is amazing….This super simple and easy corn soup is perfect for cold winter days. If you make plenty it’ll last a few days. Well..if you try hard anyways. Hope you enjoy!
  

I stared off with coconut oil and garlic in a pot. Sauté  for about 5 mintues. Add  4 cups of water along with one package of frozen corn (I used trader Joes brand). Chop and peel some sweet potatoes, and place into pot, cover  and allow to come to a boil. Add in your seasonings at this point. (Sea salt, black pepper etc). You can also add in other veggies such as broccoli, carrots etc. (However, Remove broccoli and other green veggies prior to blending). 
  

Once your corn and  potatoes are cooked place into blender and blend for a few seconds. (Do not blend broccoli, carefully spoon it out and reserve for after the soup has been blended) Return to the pot, stir and add in more seasoning as needed. This soup will be a smooth, thick consistency. Just perfect. Hope you try this out. 

Add tortillas, sour cream, bread etc. 

   

No Bake Corn Cake

  

These babies are actually fried. This is a great dinner idea, ready in minutes. Although I do not specify measurements, I trust you can use good judgement.😉 I tend to cook without measurements. However, if you try out this dinner idea let me know. Enjoy!! 
Ingredients:

Corn Kernels

Vegetable(s) of choice

Seasoning 

One egg

Gluten free flour

Small amount of baking powder

Oil for frying (I used extra Virgin Olive Oil)
  

Boil corn and other veggies. Season to taste. Place cooked veggies into blender or any blending appliance. Combine gluten free flour, one egg, baking powder, blended vegetables and seasoning in a bowl and mix well. Form medium size patties. Fry on each side until cooked and brown on one side. Flip pattie, and cook on the other side until golden brown. 
*these can be enjoyed as a main dish or side dish*

*topping ideas: feta cheese, fresh or readymade, or as I say “alreadymade” salsa* 😉
