Frenching Toast

French Toast is so delicious and not to mention easy. Having overnight guests? Try this recipe out. They’ll think you started this the night before 😉.
  

Ingredients:

Bread Slices ( I used Udi’s gluten free)

Eggs

Almond Milk (or milk of choice)

Cinnamon Powder

Dash of nutmeg

Vanilla extract
   

Combine the eggs and milk, whisk together. Add spices and vanilla extract. Add in the slices of bread and soak in the mixture for about 2-3 mintues on each side. Fry lightly until golden brown on each side, in a non stick pan. Slice diagonally. Just that quick, you’re done.  

  

Dress this up with whatever you’d like, from strawberries to powdered sugar and everything in between. Share with me your French toast recipe. Enjoy!!

 Chicky Chili

1 degree? Is that even a degree. I think we should just stop at 28 degrees, that is cold enough. Nonetheless, I’m trying to keep warm. Try out my chili recipe. 
  

So simply combine coconut oil and some garlic and sauté for a few minutes. Add in some shredded carrots and continue to cook. Add in one can of Chick peas (garbanzo beans), and one rinsed can of black beans. Add some red peppers and some fresh or frozen corn. Simmer for about 5 mintues, stirring frequently. You may add other veggies if you would like. At this point add salt, and other seasonings of choice. I also added in some turmeric powder, since I wasn’t using salsa in this chili. Did I mention it’s cold, so whatever I had on hand would have had to work. And it did. This was amazing.
  

Almost there….add just enough water to come to the same level or just a little over the veggies in your pot. Add some hot sauce and simmer on low heat for about 20 minutes. This may be less depending on the veggies you use. I added some celery to mine and scallions on top. I had these with sweet potato chips…need I say more. If you are not vegan you can add sour cream and cheese. Hope you try this out. ENJOY!!  ( Ask me why the sour cream looks pink)

Caramelts

Wanted to share a quick and simple caramel melt, recipe..This takes a little arm work but its definitely worth it.    

 

I combined:

Brown Sugar

Coconut Milk

Condensed Milk

Butter

In a large non stick pan and brought to a boil. Stirring the mixture constantly for about 15-20 minutes, hence the arm work. 
  

When the  mixture starts to boil, remove from heat and beat for an additional 20 minutes. An electric hand mixer would be a life saver at this point or really an arm saver. 

  

Once the mixture is thick and caramel like. Place into a square container and line with parchment paper of greased foil paper. Pour the mixture into the lined container and allow it to set.

  

Once the melts harden, cut into squares and hide them….I mean share ;-). Hope you enjoy!!

 *You can add-in cinnamon, vanilla extract, fresh grated ginger if you’d like or even crushed nuts*

Nutty Cookie 

Hi, just a quick sugar-free cookie I wanted to share with you. If you have at least 2 ingredients you can make these. Peanut butter and eggs. Here I added some fresh grated ginger and vanilla extract, but those are totally optional. 
 

*If you would like, you can add sugar to this for a sweeter taste and some baking powder for a fluffier texture but I opted not to*

  
I combined the peanut butter and one egg and mixed thoroughly. I added some grated fresh ginger and a little vanilla extract. You can taste the batter here and adjust to taste.

I rolled about a tablespoon of the mixture forming little balls, flattening and scoring them on the top with a knife to form a simple but sleek design.  Easy Peasy. 
 

  

I baked these for about 15-20 minutes and they were perfect. Hope you try this out or if you do something similar please share. Enjoy!!

Pesto Platter: Produce 

I roasted some veggies that was just delicious. Although it’s not summer anymore who says you can’t grill. Enjoy!!
  

I roasted on my indoor grill some:

Red peppers 

Onions

Yellow Squash

Zucchini 

Eggplant

  

I made an easy pesto sauce:
Basil
Olive Oil
Garlic 

Sea Salt

Seasoning

Blended together and created the easiest most refreshing pesto. As you guessed, veggie platter perfection. Meal in minutes Do you have a favorite veggie dish? 

* serve along mashed potatoes, rice, quinoa or whatever you like*

  
 

Hey Pumpkin’

Hope everyone’s day is going well. Wanted to share some gluten free pumpkin muffins I made.

  

These are from trader joes, it’s the Gluten Free Pumpkin Muffin mix..need I say more? Yummmm. 

  

I followed the box instructions and made 6 muffins, of which I ate 5, that says it all. They were truly delicious.

Poppin’ Corn

No novelty here..but popcorn is truly a classic. I love popcorn. Plain, buttered, sweet, spicy, really any way possible. I love making my own popcorn. Did I mention I love popcorn..
  
How do I make my popcorn? I start off with

Coconut oil

Sea salt

Vanilla extract

Honey 

Cayenne pepper (optional)

  

Stir the kernels in the mixture so they are all coated. Place lid on your pan and close tightly. Stir/ shake often. ( Please don’t burn yourself).  I used my trusty Whirley Pop, popcorn maker. I got this on clearance at target for $6.50 😳😳. I know, what a steal

  

I put the honey in last as I don’t want it to burn. I use my Whirley Pop and stirred away for 3 minutes. Perfect, hot and delicious popcorn. Making all the taste buds happy.

Triple Layer Potato Cake

Just wanted to share this fun meal idea. Very simple, potatoes, cake style turns boring potatoes into an interesting meal.
   

I got quite creative and used good ole foil paper to make a bottomless mold for these potato cakes. Of course, you can get the official ones from the store. Lol

Let’s just say, I can be quite creative….I cooked potatoes accordingly, mashed and seasoned them to taste. ( As you would make your usual mashed potatoes).

You can give this an additional layer by adding purple potatoes
  
 

Adding some…..did you guess?…..Refried beans in between, made this potato cake perfect dinner idea in Minutes. Hope you enjoy this simple meal idea!!

Breadfruit Balls

So I have a post on what breadfruit is. If you are unfamiliar you can check it out. I had some leftover breadfruit and converted them into breadfruit balls. 

  

  
 

I steamed the roasted breadfruit, mixed it with one egg, butter, seasoning and a little gluten free flour. 
  

I next formed little balls out of the mixture, coated in some gluten free flour and fried. (You can bake these for a healthier option. I currently do not have oven access 😢). Nonetheless, that didn’t stop me. After frying on each side to golden brown, they were done and delicious. You can have these with your favorite sauce. This is surprising filling as the breadfruit is quite dense.
