Quick Quinoa

Hi, hope everyone is doing well. If you will be snowed in like me this weekend hope you have everything you need in house.  Just wanted to share a quick quinoa recipe. (Quinoa pudding coming soon). Good snow day recipe ❄️☃☃. You can throw in whatever you have on hand. You can use leftovers if you would like. This can be used inside rice wrap papers for rice wraps and/or then fried for spring rolls.  Hope you enjoy. 
  

I just cooked up some quinoa as the package directions indicate. I sautéed garlic, onions and bok choy in a sauce pan with coconut oil. I added the rest of my veggies and sautéed for about 10-15 minutes. I added my seasoning. This is so fragrant and delicious.
  

Next, I placed the cooked quinoa into my vegetable mix and sautéed a bit longer. Added some sesame oil and grate some fresh ginger over the mix. Cook for about 1-2 minutes more. Turn off the heat. Enjoy!!

*If you are non-vegan you can add cheese-jalapeño, cheddar, pepper jack, goat, Brie*

Additional add-ins/Optional: Dried cranberries, cheese, olives, fresh peppers,

Triple Layer Potato Cake

Just wanted to share this fun meal idea. Very simple, potatoes, cake style turns boring potatoes into an interesting meal.
   

I got quite creative and used good ole foil paper to make a bottomless mold for these potato cakes. Of course, you can get the official ones from the store. Lol

Let’s just say, I can be quite creative….I cooked potatoes accordingly, mashed and seasoned them to taste. ( As you would make your usual mashed potatoes).

You can give this an additional layer by adding purple potatoes
  
 

Adding some…..did you guess?…..Refried beans in between, made this potato cake perfect dinner idea in Minutes. Hope you enjoy this simple meal idea!!

Breadfruit Balls

So I have a post on what breadfruit is. If you are unfamiliar you can check it out. I had some leftover breadfruit and converted them into breadfruit balls. 

  

  
 

I steamed the roasted breadfruit, mixed it with one egg, butter, seasoning and a little gluten free flour. 
  

I next formed little balls out of the mixture, coated in some gluten free flour and fried. (You can bake these for a healthier option. I currently do not have oven access 😢). Nonetheless, that didn’t stop me. After frying on each side to golden brown, they were done and delicious. You can have these with your favorite sauce. This is surprising filling as the breadfruit is quite dense.

Cheesy Bells

Well….Bell peppers anyway. I turned my boring dinner into a fun, healthy and cheesy meal. I had some gluten free pasta and sautéed  some veggies in sesame oil and seasoned it to taste.
  

I cleaned out the pepper and cut off the top…spoon the pasta mix in my pepper and place in oven until cooked to my liking.
   

And Oh yeah…I added lots of cheese..(Mozzarella, Gouda, Cheddar, Pepper Jack, etc)

You  taste of  the fresh pepper comes right through..yum yum!

How do you stuff your bells?
 

Mad about Mangu 

This Dominican dish is super simple and delicious. 

  
Living in DR for a short while, I found myself eating mangu  literally everyday or at least every other day. (Don’t judge me) 😜. Here’s how I make mine
Ingredients

Green Plantains

Cilantro (the one with long narrow leaves)

Onions

Butter

Cheese (optional)

Salt and seasoning of choice 

Method:
Peel and cut each plantain into three or four pieces and cover to boil the green plantains in water with lots of onions and the cilantro. Add Seasonings at this point. When the plantains are nice and soft drain the water however save some of the water and onion mixture. Add in butter and cheese and mash until it becomes  very soft almost to a texture resembling mashed potatoes. If it’s not soft add more of the boiled water mixture to soften the plantains. Add more salt if needed, you can place mangu in a pot or bowl and gentle shape it into a square or form to fit the bowl or container you place it in. Get creative. I sometimes make designs using a fork. Enjoy.

Popcorn “Chicken”

  
..Or not, but if it tastes like chicken who am I to argue 😜. Of course I already gave the recipe for these but since I find them so nice, had to post it twice!! I realize I  eat these quite often. Just as a snack or a nice protein addition to my meals. 
  
Ingredients:

Egg

Gluten free oatmeal

Tofu

Seasoning

Olive oil for frying

Skillet

Method:

Heat oil in skillet. Beat the egg. Mash the tofu. Add in the oatmeal and season to taste. Mix all together thoroughly. Form into shape, with a tablespoon or a similar spoon, resembling chicken nuggets squeeze firmly and place into hot oil. Fry on each side until golden brown to your liking. Enjoy!!
  
*Additional toppings: Favorite dipping sauce, hot sauce, salsa, cheese*

*You can form these into parties and place inside a gluten free bun and dress it up for a “chicken” sandwich*

  

Sweet Potato Taco

So hungry? Make some quick tacos. These are amazingly refreshing and not to mention yummy. 
 As always make with whatever substitutes you have aka whatever’s in your refrigerator 😉.

 

Ingredients:

Sweet potatoes 

Mixed Veggies (ex. Corn, green red yellow orange peppers, cilantro, red onions, green peas)

Cheese ( I used smoked Gouda and feta)

Lime

Seasoning 

Corn tortillas

  

Method: 

Boil sweet potatoes and mash when soft and cooked. Boil/chop veggies and season accordingly.   Warm corn tortilla according to package directions. Fill the tortilla spreading the sweet potato first. Squeeze fresh lime. Arrange the veggies next. Top with both cheeses. And squeeze more lime on top. These are so amazing and simple. Enjoy!!
*Additional toppings: Greek Yogurt or sour cream, hot sauce*
